Popcorn and dandelion stems are not often found on ones dinner plate, however, Soubois’ kitchen is as mysterious as its interior decor. Come dine with us as we taste their eccentric menu.

Start your night off with one of the five cocktails on the menu crafted by three renowned mixologists behind the bar. With talents like Brendan Baxter (Nectar, TopshelfMTL), Eric Jensen (Joe Beef, Velvet, Laurea) and Andrew Whimbley (Bremner, Mme Lee) named Montreal’s best bartender in 2015 at the MADE WITH LOVE national finals in Toronto, you can expect to taste well balanced fresh ingredients shaken and poured in a fancy glass.





Formerly the location of the Discothèque Copacabana, the place has undergone a complete makeover after the mother-son tandem of Francine Brûlé (Les Enfants Terribles) and Alexandre Brosseau (Flyjin) stepped in with their new enchanted underground forest. The interior, which is decorated with murals by Montreal artist GAWD, add to Soubois’ immersive environment. A cutting edge audiovisual system, designed and installed by Alex Kano of MOOG Audio fame, seamlessly transforms the establishments ambience from day to night.


Here’s a peek at the “bistro du terroir” menu, carefully prepared by Chef Guillaume Daly, serving up fresh and seasonal cuisine, largely inspired by Canada’s vast lands and wild products which are shipped directly from the boreal forests via Provender.

Teaser: raw market vegetables, chive dip, fried shallots and a platter of fresh oysters.

Pleaser: Alaskan king crab, heirloom tomatoes, wild Massala yogourt, white elderflower. (Balnea dish), maple chared trout, orange carrot puree, seaweed, radish. AAA New York steak, fiddleheads, wild mushrooms, Pont-Neuf potatoes.

Indulger: “Smors” chocolat ganache infused with wood steep tea, Graham cookie. strawberry short cake, wild rose Chantilly creme, elderflower.
